Tropicana Beach Restaurant, located in Cala Jondal, in the Sant Josep area, not only offers traditional Ibizan fish and seafood dishes. It also offers dishes and recipes for red meat lovers. It’s the case of sirloin steak with foie gras and porto sauce, a perfect feast for meat gourmets and real foodies. This recipe, sirloin steak with foie gras and porto sauce is simple but requires a careful preparation. To prepare this dish we need sirloin steak, butter, shallots, Porto wine, foie gras, Maldon salt, potatoes and wild green asparagus.
First we’ll slightly grill the sirloin steak in a pan and then put it aside. Then we’ll make the sauce, and we’ll use the juice from the meat, butter, shallots (a kind of onion) and Port wine. We chop up the shallots in thin pieces. Then we add all the ingredients together in the same pan in which we previously cooked the meat and we mix it until the sauce is ready.
After the Port sauce is ready, it’s time to prepare the foie gras. In this case we’ll slightly grill it in a pan very briefly and then finish cooking it in the oven.
As a garnish, the dish is served with a potato and wild green asparagus pie. All excellent quality.
And now comes the key moment, the dish presentation. First we place the sirloin steak which we previously grilled on top of the potato pie. Then we put the foie gras on top of the sirloin and add a coulis made with Port sauce and Maldon salt. And it’s ready to serve.
