As you already know, from our blog of Tropicana Beach Club we bring you every week some alluring suggestions, both so you can fully enjoy the island of Ibiza and so you can also enjoy with us at Cala Jondal beach. And our cuisine and gastronomy is one of Tropicana Beach Club’s main attractions. So for this month of August, we thought of showing you our delicious desserts, and specifically one of the most popular among our clientele, the Pineapple Lasagna with Toffee and Coconut Ice Cream. Next we’ll show you how we prepare it and present it.
You need a nice and fresh ripe pineapple. First you have to peel it and cut it into thin slices of about 3 millimeters width each slice. With the slices and with help of a mold you can start preparing the lasagna. Very gently place the pineapple slices alternating them with ginger and brown sugar layers. Once the lasagna has a decent seize, heat it up in the oven for about 20 minutes at 180ºC. Then take it out of the oven and let it cool off. And now lets get to the most important part, the assembly and presentation.
Over the surface of the pineapple you’ll add some more brown sugar, which is “burnt” with a kitchen torch. Meanwhile prepare a very thin Toffee sauce (cream and caramelized sugar based) and very gently pour it on the pineapple making circles.
And for the last part you will add the Coconut ice cream. As well you can decorate the dish with some fresh seasonal berries, such as strawberries or cherries.
